Lamb Ham or Mutton Ham

One of the food restorations to which I contributed in the past 10 years was the revival of lamb ham.  Here’s the history behind this splendid cured meat, that enjoyed a return in 2015 because of the efforts of Craig Rogers and Edwards Smokehouse.
