David S Shields saves flavors. As Chair of the Carolina Gold Rice Foundation and Chair of the Ark of Taste Committee for the American South, he identifies, tracks down, and brings back into cultivation and cooking the most important grains, fruits, and vegetables uprooted by American industrial agriculture. His books chronicle southern foodways and the American cooking profession. As Carolina Distinguished Professor at the University of South Carolina, his vocation is to serve every community in his region and to create scholarship that empowers farmers, cooks, gardeners, and food processors of every ethnicity, religious background, and cultural affiliation.
